Shrimp Salad

Georgia shrimper Catherine Wallace makes this delicious cold salad with plain mayonnaise, but this recipe gives an extra kick with “green mayonnaise,” spiked with onion, parsley and cilantro. Combine all the green mayonnaise ingredients in a large bowl. Mix well. Add the rest of the ingredients except the paprika and mix well. Top with a sprinkle of paprika.
Green Mayonnaise 1/2 cup mayonnaise 1/4 cup minced onion 1/2 cup minced parsley 1/4 cup minced cilantro
For the shrimp 1 pound boiled Wild Georgia Shrimp, peeled & deveined, coarsely chopped Salt and pepper to taste 1 celery stalk, minced 1 medium red pepper, minced 1 small onion, minced 1 boiled egg, diced 1/2 teaspoon paprika
